Ingredients

  • 2 cups (9 oz.) unbleached all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups (3/4 lb) unsalted butter
  • 1 cup (3 oz.) unsweetened natural cocoa powder (not Dutch-processed)
  • 3 cups firmly packed light brown sugar
  • 4 large eggs
  • 2 tsp freshly ground espresso beans
  • 2 Tbs Kahlua or coffee flavored liquor (Or sub 1 1/2 tsp vanilla extract)
  • Ganache:
  • 1/2 cup whipping cream
  • 5 1/2 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
  • 1/4 tsp vanilla extract
  • 2-3 Tbs Kahlua or coffee liquor
  • Tip:
  • For the best results, measure your flour by weight
