Jollof Rice (a Nigerian party pillaf)

This is basically rice in red capsicum (or bell pepper) and tomato sauce. Lots of onions, thyme and curry. Cooked right, it's simply delicious!

Wine and Drink Pairings: Coca cola, a sweet white, a semi sweet red wine

Ingredients

  • Rice- 4 cups
  • Water 2 pints
  • Vegetable oil (Preferably sunflower oil)
  • Onions- 2 medium (some diced and some sliced in rings)
  • Beef Stock - 2 cups
  • Curry Powder (to your taste)
  • DrieThyme
  • Red Capsicum 6 large
  • Chilli Powder (to taste)
  • 1 Bay leaf
  • Salt - (to taste)

Directions

  1. Boil water
  2. Blend diced onions, tomatoes and bell pepper together
  3. pour into boiling water
  4. Add oil to the mixture
  5. Add on the beef stock and chilli powder
  6. Add the rice and let boil for 15 Minutes
  7. Next theBay leaf, Curry, Dried thyme and salt
  8. Simmer for about 20 minutes or until the liquid's dried and the rice, soft
  9. Sprinkle some onion rings 5 minutes before the meal is cooked
  10. Garnish with remaining onion rings
  11. Serve with Chicken-Spinach Stir-fry (next recipe)
