John Rivers Turkey Thighs Boca

Ingredients

  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 boneless turkey thighs, skinned & cut in strips
  • Vegetable cooking spray
  • 1/4 c. minced onion
  • 1 garlic clove, chopped
  • 1/4 c. peach wine cooler
  • 1 (14 1/2 ounce) can whole tomatoes, undrained & minced, no salt added

Directions

  1. Sprinkle salt and pepper over turkey strips. Coat a large frying pan with vegetables cooking spray. Place over medium-high heat till hot. Add in turkey and cook 3 min on each side or possibly till golden brown. Remove turkey from frying pan and set aside. Wipe drippings from frying pan with paper towel.Coat frying pan with cooking spray. Place over medium-high heat till hot. Add in minced onions and chopped garlic, saute 1 minute. Add in wine cooler, minced tomatoes and brown turkey. Bring to a boil and serve.
