Ingredients

  • 1/2 (75g) cup baby frozen peas, thawed
  • 1 small cucumber, seeded and finely diced
  • 10 sundried tomatoes, sliced
  • handful of mint leaves, torn
  • 1/2 (60g) cup freshly grated Pecorino Romano or crumbled feta cheese
  • 2 green onions, chopped
  • 2 large cloves garlic, minced
  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1/2 teaspoon sea salt–or to taste
  • 1/4 teaspoon pepper
