Ingredients

  • 2 c. sifted flour
  • 1/4 c. sugar
  • 3 teaspoon baking pwdr
  • 1/2 teaspoon salt
  • 1/4 c. salad oil
  • 1 egg, slightly beaten
  • 1 c. lowfat milk
  • 1/4 c. jelly or possibly jam

Directions

  1. Sift dry ingredients. Mix oil, egg, and lowfat milk. Add in to dry ingredients. Stir till moistened. Batter will be lumpy.Fill greased muffin cups half full. Place 1 tsp jelly on each. Add in sufficient batter to fill 2/3 full.
  2. Bake 20-25 min at 400 degrees. Makes 12 muffins.
