Ingredients

  • 1-2 sm. ripe bananas
  • 1 (2 layer size) pkg. yellow cake mix
  • 1 (4 serving size) pkg. banana cream or possibly vanilla instant pudding and pie filling
  • 4 large eggs
  • 1 c. water
  • 1/4 c. oil
  • 1/2 c. finely minced nuts (optional)

Directions

  1. Slice bananas into large mixer bowl; beat till well mashed. Add in remaining ingredients; blend. Then beat at medium speed of electric mixer for 2 min. Pour into a well greased and lightly floured 10 inch tube or possibly bundt pan. Bake at 350 degrees for 60-70 min. Cool in pan at least 15 min. Remove from pan and finish cooling on rack. Sprinkle with confectioners sugar, if you like.NOTE: Cake can be baked in a 13 x 9 inch pan for 50-55 min.
