Ingredients

  • 6 x Potatoes
  • 1 tsp Mustard -- or possibly brown
  • 1 x Bacon slices
  • 1 Tbsp. Minced onions
  • 1 x Celery stalks -- minced
  • 2 tsp Salt
  • 1 Tbsp. Margarine
  • 2 tsp Flour
  • 1 Tbsp. Sugar
  • 1 c. Beer
  • 1/2 tsp Tabasco sauce
  • 2 Tbsp. Fresh parsley -- minced

Directions

  1. Boil potatoes till just tender. Peel and slice. Fry bacon till crisp.
  2. Break into small pcs and mix with onion, celery and salt; set aside.
  3. Stir melted butter and flour in a small saucepan till blended. Add in mustard and sugar. Slowly stir in beer and Tabasco sauce. Bring to a boil, stirring constantly. Pour over potatoes. Sprinkle with parsley. Toss lightly and let stand 1 hour. Add in bacon mix; toss gently and serve.
