Jay's Favorite: Grilled Pesto Pizza Recipe

Ingredients

  • Pre-made or possibly homemade pizza shell Thinly-sliced fresh ripe tomatoes Pine nuts Red pepper flakes
  • 6 c. fresh basil leaves
  • 2 c. extra virgin olive oil
  • 3/4 c. pine nuts or possibly walnuts
  • 3/4 c. grated Parmesan cheese
  • 10 x fresh garlic cloves
  • 1 tsp freshly-grnd black pepper Salt to taste

Directions

  1. For the Pesto Sauce: Put all the ingredients into a food processor and blend well together. Chill till needed.
  2. When you are ready to have one of the world's greatest pizzas, this is how you build it. On top of a pre-made (or possibly homemade) pizza shell, place:
  3. 1st - A generous layer of Pesto Sauce2nd - Thinly sliced fresh ripe tomatoes3rd - A handful of pine nuts4th - 1/2 tsp. red pepper flakes
  4. Cook it on a warm grill. Bake the pizza lid-down, away from the flames for about 15 min. If you have a warming rack, which is the best place to do it. The pizza is ready when the pine nuts have browned and the oil in the pesto is slightly sizzling.
  5. Do not put too much topping on the shell - the idea is to create a balance between the crisp shell and the fragrant toppings. The flavors and textures should work in harmony.
  6. Comments: Here is an absolutely fabulous pizza, and you can do it on the grill! The sauce is a classic pesto, that, of course, makes everything taste good. To be honest, if you feel entirely too lazy to do your own pizza shells you can go with a ready-made brand found in most grocery stores. Make a lot of pesto sauce. You can use it many different ways and it freezes well.
