Ingredients

Cost per recipe $1.26 view details
  • 1 lrg cucumber sliced (I didn't seed or possibly peel it)
  • 1 Tbsp. rice vinegar
  • 1 tsp soy sauce
  • 1/2 tsp sugar
  • 1/2 tsp sesame seeds toasted

Directions

  1. This is light, refreshing, and extremely easy! I snarfed the whole thing for dinner, so it's pretty darned delicious too! :)
  2. BTW, the sesame seeds may seems strange, and even unnecessary, but they are what brings this dish together (IMHO). Go easy on them, you can add in more later - a little go a long way! [Crystalle]
  3. (Book by Elisabeth Lambert Ortiz with Mitsuko Endo)
  4. Put cukes in bowl. Separately, mix vinegar, soy sauce and sugar till sugar dissolves. Pour over cukes. Toss. Sprinkle with sesame seeds, toss and serve. YUMMM!!!
