Ingredients
- 6 lg. sweet potatoes
- 1 c. sugar
- 1 stick butter
- 2 large eggs
- 3 teaspoon flour
- 1 teaspoon vanilla
- 1 c. light brown sugar
- 1/2 c. flour
- 1 c. pecan pcs
- 2/3 stick butter
Directions
- Bake sweet potatoes and remove sufficient to measure 3 cups. Add in sugar, butter, large eggs, flour and vanilla; beat by hand till well blended. Place in casserole dish. Sprinkle topping over casserole. Bake at 350 degrees for 30 min.Note: The topping will be moist and sticky when mixed, so break apart and crumble on casserole with fingers.
