Ingredients
- 2 Lbs. Sirloin, Flank, Rib-eye, T-Bone or Porterhouse Steaks
- Jamaican Jerk Marinade:
- 1/2 Cup Fresh Squeezed Lime Juice (About 3 Limes)
- 1 Tsp. Lime Zest
- 1/4 Cup Vegetable Oil
- 1/4 Cup Honey
- 1/2 Tsp. Ground Mustard
- 2 Cloves Garlic, Minced
- 1/2 Tsp Salt
- 1/2 Tsp. Coarsely Ground Black Pepper
- 1 Tsp. Dried Thyme
- 1/4 Tsp. Dried Oregano
- 3/4 Tsp. Ground Allspice
- 1/2 - 1 Tsp. Red Pepper Flakes (To Taste)
- Garnish:
- 1 Medium Fresh Lime, Cut Into 6 Wedges (Tip)
- 2 Tbsp. Fresh Cilantro, Snipped
- (See Attached Recipe for Salsa)
Directions
For Steak:
1.
In a small bowl, whisk together all ingredients, except steak and lime wedges. Score steak with a knife or pierce it with a fork/meat tenderizer several times.
2.
Place steak in a shallow glass baking dish and pour lime juice mixture over the steak; turn to coat both sides. Refrigerate for 6 to 8 hours to "marry" the flavors, turning occasionally.
3.
Remove steak from marinade and grill 5 to 6 minutes on each side (or broil in the oven for 3 minutes on each side), or to desired doneness.
4.
Slice thinly on the diagonal and serve with lime wedges and citrus salsa, if desired.
Cook's Tip:
1.
Grill limes, cut side down, for 2 - 5 minutes or until golden brown for extra flair.
2.
You can easily use pork or chicken with this in place of the beef.
