Jamaican Coconut And Ginger Bread, Abm

Ingredients

  • 1 1/4 c. Lowfat milk
  • 3 Tbsp. Butter, unsalted
  • 2 Tbsp. Honey
  • 2 tsp Active dry yeast
  • 3 c. Bread flour
  • 1 1/2 Tbsp. Ginger, minced fresh
  • 1 tsp Salt
  • 3/4 c. Coconut, flaked

Directions

  1. Scald the lowfat milk. Remove from the heat. Stir in butter and honey. Let cold to room temperature.
  2. Add in the lowfat milk mix and all other ingredients except the coconut in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturer's directions.
  3. At the beeper (or possibly a few min before the end of the first kneading cycle), add in the coconut. Let the bread cold before slicing.
