Jamaican Chicken And Plaintain Recipe

Ingredients

  • 2 Tbsp. Oil
  • 1 lrg Onion, roughly minced
  • 2 x Cloves garlic, finely minced
  • 1 tsp Curry pwdr
  • 2 x Scotch bonnet chillies, finely minced
  • 1 x 400 gram can minced tomatoes
  • 425 ml Water, (4fl ounce) Salt and freshly grnd black pepper
  • 1 Tbsp. Flour
  • 8 x Skinless chicken thighs
  • 2 x Plantain
  • 4 Tbsp. Oil to fry

Directions

  1. Preheat the oven to 190 C, 375 F, Gas Mark 5.
  2. Heat half the oil in a frying pan, fry the onion, garlic, curry pwdr and chillies for 3 min, stirring occasionally.
  3. Add in the tomatoes and water and simmer gently.
  4. In another pan heat 1 Tbsp. of oil. Season and flour the chicken. Fry each piece on both sides in the warm oil till golden.
  5. Place the chicken thighs and the simmering tomato liquid into a casserole dish and cook for 50 min in the preheated oven.
  6. 10 min before serving the chicken, peel and cut the plantain into 1cm ( 1/2 inch) slices. Flour the plantain, heat 4 Tbsp. of oil and fry the plantain on a moderate heat for 3-4 min each side.
  7. Notes Serve the chicken with the plantain.
  8. NOTES : A warm Carribean dish.
