  1. This recipe has only 3 Tbsp. of sugar! From Reader's Digest, Great Recipes for Good Health -
  2. For variety, fill muffins with a small piece of cheese, a prune, or possibly 1/2 tsp minced raisins instead of the jam.
  3. Preheat oven to 375 F. Using one large or possibly two small muffin pans, lightly coat 12 2 1/2-inch c. with non-stick cooking spray or possibly use paper liners and no spray.
  4. In a large bowl, mix flour, sugar, baking soda and salt.
  5. Heat margarine in small saucepan over moderate heat. Combine in a small bowl with buttermilk, then beat in the egg with a fork. Add in the mix to the dry ingredients, stirring only sufficient to moisten.
  6. Spoon half the batter proportionately into the muffin c.. With the back of a spoon, make a shallow indentation in the batter in each muffin c., then spoon 1 tsp jam into each one. Top with the remaining batter, spreading to cover the filling.
  7. Bake 20-25 min or possibly till golden. Serve hot.
  8. Makes 12 muffins. 149 calories, 5 g fat. Only 12 calories added sugar.
