Ingredients

  • 1 lrg onion, diced
  • 4 x cloves garlic, minced or possibly pressed
  • 2 quart water
  • 1/2 c. extra-virgin extra virgin olive oil
  • 1 can Italian-style diced tomatoes
  • 1 lb lentils Salt, to taste

Directions

  1. Saute/fry onions and garlic in extra virgin olive oil for 2-3 min in a large soup pot. Add in all remaining ingredients and simmer for 2-3 hrs. Accompany with fresh Italian bread.
  2. Serves 4
