Italian Style Braised Marlin Recipe

Ingredients

  • 3 Tbsp. Extra virgin olive oil
  • 2 x Marlin steaks, approximately 375g (12oz) in weight and 2cm (1 inch) in thickness, cut in half along the grain of the fish
  • 1 lrg Onion, finely minced
  • 3 x Cloves garlic, finely minced
  • 750 gm Tomatoes, peeled, deseeded and roughly minced (1 1/2lb)
  • 50 gm Black olives, pitted (2oz) Salt and freshly grnd black pepper Bouquet garni
  • 1 x Lemon, juice of
  • 150 ml Water, ( 1/4 pint)
  • 1 x 15 grams pac fresh basil, torn into pcs

Directions

  1. Preheat the oven to 180 C, 350 F, Gas mark 4.
  2. In an ovenproof casserole dish, heat the extra virgin olive oil then seal the marlin steaks for 1 minute on each side. Remove and put to one side.
  3. Saute/fry the onion and garlic till softened. Then add in the tomatoes, black olives, seasoning, bouquet garni and lemon juice. Cover and cook for 5-10 min.
  4. Add in the fish, then add in the water to just barely cover the fish. Cover with a lid and place in the oven for 20-25 min, or possibly till the fish is cooked.
  5. To serve; place the fish steak on plates, spoon over the sauce and sprinkle with fresh basil and serve immediately.
  6. NOTES : A lovely combination of fresh marlin with tomatoes, herbs and plump olives.Ideal served with hunks of fresh bread.
