Ingredients
- 3 Tbsp. Extra virgin olive oil
- 2 x Marlin steaks, approximately 375g (12oz) in weight and 2cm (1 inch) in thickness, cut in half along the grain of the fish
- 1 lrg Onion, finely minced
- 3 x Cloves garlic, finely minced
- 750 gm Tomatoes, peeled, deseeded and roughly minced (1 1/2lb)
- 50 gm Black olives, pitted (2oz) Salt and freshly grnd black pepper Bouquet garni
- 1 x Lemon, juice of
- 150 ml Water, ( 1/4 pint)
- 1 x 15 grams pac fresh basil, torn into pcs
Directions
- Preheat the oven to 180 C, 350 F, Gas mark 4.
- In an ovenproof casserole dish, heat the extra virgin olive oil then seal the marlin steaks for 1 minute on each side. Remove and put to one side.
- Saute/fry the onion and garlic till softened. Then add in the tomatoes, black olives, seasoning, bouquet garni and lemon juice. Cover and cook for 5-10 min.
- Add in the fish, then add in the water to just barely cover the fish. Cover with a lid and place in the oven for 20-25 min, or possibly till the fish is cooked.
- To serve; place the fish steak on plates, spoon over the sauce and sprinkle with fresh basil and serve immediately.
- NOTES : A lovely combination of fresh marlin with tomatoes, herbs and plump olives.Ideal served with hunks of fresh bread.
