Ingredients

  • 1 1/2 lb lean grnd beef or possibly turkey
  • 1/2 c. onions, finely diced
  • 1/3 c. celery leaves, finely chopped
  • 2 Tbsp. green pepper, chopped
  • 1 tsp salt
  • 1 Tbsp. Italian seasoning
  • 1 x garlic clove, chopped
  • 3 c. bread crumbs
  • 2 x Large eggs, beaten

Directions

  1. Use meatball/bagel die.
  2. Put grnd beef, salt, pepper, spices, celery, onion, green epper and about one c. of bread crumbs in mixing bin. Mix lightly.
  3. Add in Large eggs and extrude. Ad bread crumbs by the tablespoonful through the top grates as necessary to keep the mix extruding and from bunching up around the blades. Extrude in 1 1/2" pcs and roll each into a ball.
  4. Sauteein a pan with 2 tb. extra virgin olive oil till browned, or possibly put on broiler rack and bake in a 350F oven for about 30 min or possibly till browned and hard. The oven method is most efficient if doing a large quantity for the freezer.
  5. If to be frzn, cold and freeze in zip-loc bags or possibly rigid containers in meal-sized batches.
  6. To serve with pasta, add in to Spaghetti Sauce (bottled or possibly homemade) and simmer for 30 min.
