Italian Fish Skillet is an easy, quick and delicious recipe for a 20 minute meal from start to finish. Fish filets with Italian vinaigrette salad dressing, bell peppers, zucchini, tomatoes, pesto and seasoned with fresh basil. All done in 1 pan on the stovetop. Ingredients

  • 4 tilapia, cod or haddock filets (1 lb. total weight)
  • 1/4 cup Italian vinaigrette salad dressing with extra virgin olive oil, divided
  • 1 tbsp pesto
  • 1 yellow bell pepper, chopped
  • 1 zucchini, cut lengthwise, then crosswise into slices
  • 1 cup grape tomatoes
  • 3 tbsp thinly sliced fresh basil

Directions

  1. Brush fish with 2 Tbsp of the dressing; cook in skillet over medium heat 3 to 4 minutes on each side or until fish flakes easily with fork. Transfer to plate; cover to keep warm.
  2. Add in remaining dressing, pesto, vegetables and tomatoes to skillet; cook 5 minutes or until heated through, stirring frequently. Spoon over fish.
  3. Top with basil.
