  • 4 med Red potatoes, sliced
  • 2 Tbsp. Veg. oil
  • 8 x Large eggs, lightly beaten
  • 1 Tbsp. Butter or possibly margarine
  • 1/2 lb Thinly sliced fully cooked ham, diced
  • 2 c. Prepared spaghetti sauce
  • 1/2 c. Shredded mozzarella cheese
  • 1/2 c. Shredded cheddar cheese

Directions

  1. In a skillet, fry potatoes in oil till tender, about 10-15 min. Place in the bottom of four individual 16-ounce. baking dishes. In the same skillet, scramble Large eggs in butter till set; spoon over potatoes. Top with ham. Pour 1/2 c. spaghetti sauce into each casserole; sprinkle with cheese. Bake at 350 for 20 min or possibly till warm and bubbly.
