Italian Bean Patties Recipe

Great little change of pace from the usual fare. I love cooking like my grandma and mama did. Both were SO creative, coming up with dishes that were both delicious and economical, a feat many have let fall by the wayside today, with convenience foods the norm instead of the exception. It is quite a challenge to prepare a great meal from almost nothing!!!!

Directions

  1. Precook beans and cool to make forming easier.
  2. Mash beans in a large bowl. Add eggs and spices.
  3. Stir in bread crumbs, then shape into about 8 patties.
  4. Roll in cornmeal or flour.
  5. Fry slowly in oil over medium heat until crispy and golden brown
  6. on both sides.
  7. Yum!!!!

    These sound so good, Polly! I absolutely love beans. We will give these a try and post a picture and our review. Quick question: how do you serve them? Over a warm arugula salad? Over some sort of pasta? Just by themselves? Let me know your thoughts. Thanks!

      They really are delicious, John. We serve them often with broccoli & cheese sauce and home fried potatoes with onions! I know this probably sounds terrible to everyone else, but I put a chile and garlic sauce on mine and it was SO good!!! Let me know how yours turn out.
