Ingredients

  • 3 1/2 c. peeled sliced tart cooking apples
  • 1/2 c. butter -- softened
  • 1 c. plus 2 Tbsp. sugar
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 c. all-purpose flour
  • 2 tsp baking pwdr
  • 1/4 tsp salt
  • 1/3 c. orange juice
  • 1/3 c. lowfat milk
  • 2 Tbsp. sliced almonds
  • 2 Tbsp. raisins
  • 1 tsp grated lemon rind
  • 1 tsp grated orange rind Apple slices Fresh mint leaves

Directions

  1. Preheat oven to 350 degrees F. In a large skillet, saute/fry apples in 3 Tbsp. butter till almost tender. Sprinkle with 2 Tbsp. sugar and 1 tsp. cinnamon. Arrange sauteed apple slices on bottom of a buttered 9 inch spring-form pan; set aside. In a medium bowl, cream 5 Tbsp. butter and 1 c. sugar till fluffy. Add in egg and vanilla; beat 2 min, scraping bowl occasionally. Combine flour, baking pwdr, salt and 1 tsp. cinnamon; add in to creamed mix alternately with orange juice and lowfat milk. Beat on low speed. Mix in remaining ingredients. Pour batter over apples. Bake 55 min, or possibly till cake tests done. Cold thoroughly. Remove sides of pan and invert onto platter.
  2. Garnish with apple slices and mint leaves.
  3. Serves 6 to 8.
