Ingredients

  • 2 lb Catfish fillets
  • 2 c. Buttermilk seasoned with see * Note
  • 3 1/2 c. Cornmeal
  • 1/2 c. Flour
  • 2 c. Homemade mayonnaise
  • 1/2 c. Chopped onions
  • 2 Tbsp. Chopped shallots
  • 1 Tbsp. Chopped garlic Juice of two lemons
  • 1 Tbsp. Crystal warm sauce
  • 1 Tbsp. Finely minced tarragon
  • 2 Tbsp. Finely minced parsley Salt to taste Freshly-grnd black pepper to taste Jalapeno Hushpuppies see * Note Maw Maws Slaw see * Note

Directions

  1. Preheat the fryer.
  2. Marinate the fish in the seasoned buttermilk. In a mixing bowl, mix the cornmeal and flour together. Season the mix with Emeril's Essense, salt and pepper. Remove the fish from the buttermilk, removing any excess. Dredge each fish in the cornmeal, coating each side completely. Lay the fish in the warm oil and fry till golden brown-brown, about 7 min. Remove from the oil and drain on a paper-lined plate. Season with Essense.
  3. In a mixing bowl, combine the mayonnaise, onions, garlic, lemon juice, warm sauce, and herbs together. Mix thoroughly. Season with salt and pepper. Refrigeratefor 1 hour.
  4. Mound the Maw Maws Slaw on a platter and arrange the fried fish and Jalapeno Hushpuppies around the slaw. Garnish with parsley and Essence. Serve the chilled sauce on the side.
  5. This recipe yields 6 servings.
