Ingredients

  • 1 x Ripe Avocado Juice of 1 large lime
  • 3 c. Rice, cooked
  • 1 can (15z) Whole black beans, liquid removed
  • 4 x Green onions, chopped
  • 2 Tbsp. Cilanto, chopped
  • 2 Tbsp. Extra virgin olive oil Salt And Pepper

Directions

  1. Description:A cold treat which's also a breeze to make.
  2. Instructions:Peel, pit, and dice the avocado and put it in a small bowl. Pour the lime juice over and toss to proportionately coat the avocado.
  3. In a large bowl, combine the rice, liquid removed beans, green onions, cilantro, extra virgin olive oil, salt and pepper. Stir to proportionately mix, add in the avocado and stir gently to incorporate. Taste the salad for seasoning and refrigeratetill ready to serve.
