Irish Coffee Cake With Heavy Cream

Ingredients

  • 4 large eggs
  • 1 teaspoon vanilla
  • 1/2 c. oil
  • 1/2 c. water
  • 1/4 c. Irish Whiskey
  • 1/4 c. coffee liqueur
  • Healthy pinch of salt
  • 1 pkg. chocolate pudding mix
  • 1/2 c. minced pecans
  • 1 stick butter
  • 1 c. sugar
  • 1/4 c. Irish Whiskey

Directions

  1. Mix all ingredients together except pecans. Prepare bundt pan by buttering and flour. Spread pecans around on bottom. Pour in mix. Bake 35 to 45 min.
  2. Bring to a boil. Cook about 4 min on low flame. Pour over cake and let seep in for several hrs. Unmold cake and serve with heavy unsweetened cream poured over each slice.
