Ingredients
- 1 Tbsp. All-purpose flour
- 1 tsp Low-calorie margarine
- 1/4 c. Minced white onion
- 1/2 c. Leftover mashed potatoes
- 1/2 c. Low-fat low-sodium chicken broth
- 2/3 c. Nonfat lowfat milk
- 1/4 tsp White pepper
- 1 tsp Dry chives
Directions
- Combine the flour and margarine in a small saucepan over medium heat. Stir with a whisk to make smooth. Add in the onions and stir for 1 minute.
- Alternately add in the potatoes and broth till thick and sticky. Slowly whisk the lowfat milk into the mix till smooth.
- Reduce the heat and add in the pepper and chives. Simmer for 5 min and serve warm.
