Insanely Healthy Sweet Potato Flax Muffins Recipe

These muffins are lightly sweetened with maple syrup and get a healthy dose of fiber and protein with flax and quinoa flours. They're gluten-free, white-sugar-free and can easily be made dairy free as well! Moist and delicious, they're just a tad sweet, so they're perfect with a healthy breakfast or as a dinner roll, or even dessert!

Directions

  1. * Preheat oven to 400°.
  2. * Line 12 muffin tins with liners or spray with cooking spray.
  3. * In a large bowl, whisk all dry ingredients until thoroughly incorporated.
  4. * In a smaller bowl, mix eggs, sweet potato puree, maple syrup, butter and milk thoroughly until smooth.
  5. * Fold the wet ingredients into the dry until just incorporated and a bit lumpy.
  6. * Fill evenly into tins and smooth with a spoon.
  7. * Bake for 22-25 minutes or until slightly browned on top.
