The best enchiladas I’ve ever had came from a place called Sadies in Albuquerque, New Mexico. This iconic restaurant is big and every night it’s a hopping place. New Mexico style enchiladas are “stacked” rather than rolled with an enchilada on the bottom and layers of filler topped by sauce and enchiladas 3 or 4 high.
Then the enchiladas are covered with red or green chili sauce or in the famous New Mexico style called “Christmas” which is red sauce on one side and green sauce on the other. Finally, many people (myself included) order this delectable stacked dish “con huevo” with a fried egg on top. Oh man, that’s some fantastic eating.

%20order%20this%20delectable%20stacked%20dish%20%E2%80%9Ccon%20huevo%E2%80%9D%20with%20a%20fried%20egg%20on%20top.%20%20Oh%20man,%20that%E2%80%99s%20some%20fantastic%20eating.%3C/p%3E%3Cp%3EMost%20of%20us%20don%E2%80%99t%20make%20enchiladas%20at%20home%20because%20it%E2%80%99s%20messy.%20%20But%20it%E2%80%99s%20worth%20it.%20%20And%20it%E2%80%99s%20a%20lot%20cheaper%20than%20going%20to%20your%20local%20Mexican%20restaurant.%20%20Plus,%20if%20you%E2%80%99ve%20got%20kids,%20everyone%20can%20pitch%20in%20and%20get%20messy%20together.%3C/p%3E%3Cp%3EOne%20of%20the%20other%20great%20things%20about%20enchiladas%20is%20that%20you%20can%20make%20it%20with%20leftover%20meat%E2%80%94shredded%20pork%20or%20beef%20or%20left%20over%20chicken%20or%20turkey.%20%20My%20version%20today%20uses%20the%20last%20of%20the%20leftover%20Thanksgiving%20turkey%20which%20I%20froze%20in%20November%20for%20when%20we%20wanted%20a%20turkey%20dish.%3C/p%3E%3Cp%3EI%E2%80%99ve%20also%20made%20enchiladas%20from%20some%20old,%20freezer%20burned%20chicken%20thighs%20and%20legs%20I%20found%20rummaging%20around%20in%20the%20freezer.%20%20I%20thawed%20them%20and%20tossed%20them%20on%20the%20grill%20with%20a%20generous%20shaking%20of%20salt,%20pepper%20and%20garlic%20then%20let%20them%20cool%20before%20peeling%20off%20the%20skin%20and%20shredding%20the%20meat.%20%20It%20might%20be%20freezer%20burned%20but%20Cheap%20Bastid%20isn%E2%80%99t%20going%20to%20let%20it%20go%20to%20waste%20if%20I%20can%20make%20a%20perfectly%20good%20dinner%20of%20enchiladas%20from%20that%20old%20tired%20chicken.%3C/p%3E%3Cp%3ESummary:%20Here%E2%80%99s%20a%20great%20family%20meal%E2%80%93and%20you%20can%20make%20it%20with%20leftovers.%20Tasty,%20easy%20and%20just%20a%20little%20bit%20messy.%20You%E2%80%99ll%20love%20%E2%80%98em!%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3ESome%20recipes%20call%20for%20a%20quick%20frying%20or%20baking%20of%20the%20tortillas%20and%20some%20don%E2%80%99t.%20Tyler%20Florence%20from%20Food%20Network%20said%20to%20just%20microwave%20them%20for%20about%2030%20seconds.%20I%20did%20some%20microwaved%20and%20some%20with%20no%20heating%20and%20I%20think%20just%20a%20bit%20of%20microwaving%20works%20best.%20It%20makes%20the%20tortilla%20just%20a%20bit%20more%20pliable%20as%20you%20load%20it%20and%20fold%20it%20into%20the%20dish.%20So%20put%20a%20short%20stack%20of%204%20on%20a%20microwave%20dish%20and%20zap%20them%20for%20about%2030%20seconds%20on%20high.%20Load%20those,%20then%20do%204%20more.%3C/p%3E%3Cp%3EWhatever%20meat%20you%20use%E2%80%94chicken,%20pork%20shoulder%20or%20beef%20(chuck/bottom%20round/ground)%20is%20best%20shredded.%20Use%202%20forks%20or%20your%20hands%20and%20put%20it%20in%20a%20bowl.%20Shred%20the%20cheese%20and%20put%20it%20in%20a%20bowl.%20Pour%20enough%20sauce%20in%20the%20baking%20dish%20to%20just%20cover%20the%20bottom%20when%20you%20spread%20it%20out%20with%20the%20back%20of%20a%20spoon.%20Put%20the%20rest%20of%20the%20sauce%20in%20a%20wide%20opening%20flat%20bowl%E2%80%94or%20just%20leave%20it%20in%20the%20saut%C3%A9%20pan%20and%20dip%20from%20there.%3C/p%3E%3Cp%3EUse%20your%20hands.%20Get%20messy%E2%80%94you%E2%80%99ll%20want%20to%20wear%20an%20apron!%20Dip%20the%20tortilla%20into%20the%20sauce%20to%20coat%20it%20and%20then%20use%20a%20finger%20to%20%E2%80%9Csqueegee%E2%80%9D%20the%20extra%20sauce%20off.%3C/p%3E%3Cp%3EHold%20the%20coated%20tortilla%20in%20your%20hand,%20put%20a%20couple%20tablespoon%E2%80%99s%20worth%20of%20meat%20in%20the%20middle%20then%20about%20a%20tablespoon%20of%20cheese%20(again%20I%20used%20my%20fingers).%20Roll%20the%20edges%20of%20the%20tortilla%20over%20the%20meat%20and%20cheese%20then%20lay%20it%20in%20the%20baking%20dish,%20folded%20side%20down.%20Do%20this%20for%20each%20tortilla.%20Then%20pour%20sauce%20over%20the%20top%20and%20sprinkle%20the%20rest%20of%20the%20cheese%20over%20that%20and%20your%20ready%20to%20bake.%20Cover%20with%20foil.%3C/p%3E%3Cp%3EPut%20the%20baking%20dish%20in%20a%20350%20degree%20oven%20for%20about%2020%20minutes%20and%20you%E2%80%99re%20ready%20to%20go.%20Plate%20with%202%20enchiladas%20topped%20with%20extra%20sauce,%20sour%20cream%20and%20garnished%20with%20green%20onion%20and%20tomato.%3C/p%3E%3Cp%3EPreparation%20time:%2015%20minute(s)%3C/p%3E%3Cp%3ECooking%20time:%2020%20minute(s)%3C/p%3E%3Cp%3ENumber%20of%20servings%20(yield):%206%3C/p%3E%3Cp%3EThese%20were%20fantastic.%20%20One%20of%20the%20things%20I%20mentioned%20to%20Mrs.%20CB%20was%20that%20the%20baking%20at%20a%20bit%20lower%20temperature%20and%20making%20a%20bit%20more%20sauce%20seemed%20to%20soften%20the%20tortillas%20up%20more%20and%20let%20the%20flavor%20of%20the%20corn%20come%20through%E2%80%94almost,%20but%20not%20quite,%20like%20a%20tamale.%20%20The%20sauce%20was%20just%20right%E2%80%94not%20too%20hot%20and%20not%20too%20mild.%20%20You%20can%20always%20add%20a%20bit%20more%20hot%20sauce%20when%20you%E2%80%99re%20eating%20them%20if%20you%20want%20more%20%E2%80%9Ckick%E2%80%9D.%3C/p%3E%3Cp%3EHere%E2%80%99s%20the%20link%20to%20Cheap%20Bastid%E2%80%99s%20recipe%20for%20Semi-Homemade%20Enchilada%20Sauce%20again:%20http://www.cheap-bastid-cooks.com/semi-homemade-enchilada-sauce%3C/p%3E%3Cp%3EThe%20Cheap%20Bastid%20Test:%20%20So%20did%20this%20meet%20the%20%E2%80%9Ccheap%E2%80%9D%20requirement?%20%20Pretty%20much.%20%20The%20left%20over%20turkey%20meat%20originally%20cost%20$1/lb%20on%20the%20bone%20so%20figure%20about%20$1.75.%20%20The%20enchilada%20sauce%20costs%20$1.83%20(according%20to%20my%20last%20post)%20and%20a%20dozen%20tortillas%20are%20about%20$1.%20%20Add%20another%20$1.50%20for%20the%20cheese%20(I%20buy%20it%20for%20about%20$2.75/lb%20already%20shredded%20at%20Costco)%20and%20maybe%20another%20$1%20for%20green%20onions,%20tomato%20and%20sour%20cream.%20%20Total:%20%20Right%20at%20$7.%20%20This%20fed%203%20people%20generous%20dinner%20portions%20and%20was%20enough%20for%20lunch%20for%202%20the%20next%20day.%20%20Three%20dinners%20and%202%20lunches%20in%20a%20Mexican%20restaurant%20would%20set%20you%20back%20about%20$45.%3C/p%3E%3Cp%3EThe%20other%20thing%20to%20remember%20is%20that%20if%20you%20do%20this%20with%20roast%20pork%20or%20roast%20beef,%20that%20the%20meat%20can%20do%20%E2%80%9Cdouble%20duty.%E2%80%9D%20%20Plan%20your%20meat%20purchase%20so%20that%20you%20can%20have%20a%20roast%20beef%20or%20pork%20dinner%20with%20enough%20left-over%20for%20enchiladas.%20%20You%20can%20cook%20the%20roast%20beef%20or%20pork,%20shred%20it%20and%20then%20freeze%20it%20for%20when%20you%20want%20to%20make%20enchiladas%20or%20BBQ%20sandwiches,%20etc.%20%20That%20stretches%20your%20food%20budget%20farther,%20reduces%20waste%20and%20increases%20taste!%3C/p%3E%3Cp%3EThat%E2%80%99s%20the%20Cheap%20Bastid%20Way:%20Eat%20Good.%20Eat%20Cheap.%20Be%20Grateful!%3C/p%3E){kind=link}
