  • 6 large garlic cloves, minced
  • 2 medium shallots, minced
  • 2 ounces thinly sliced prosciutto, minced
  • 4 tablespoons minced fresh parsley, plus extra for garnish
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons Pernod
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground pepper
  • 6 tablespoons good olive oil
  • 1/2 cup panko bread crumbs
  • 6 tablespoons dry white wine
  • 2 pounds fresh bay scallops
  • lemon, for garnish
