  • 2 x Mashed large ripe (but not brown) bananas, totalling approx 400g
  • 1/2 c. Caster sugar (superfine sugar)
  • 2 Tbsp. Lemon juice
  • 1 ct (300ml) chilled cream, beaten thick

Directions

  1. This recipe is one to honor Linda ("hvane"). An Australian recipe from The Terrace Times, Bicentennial Cookbook to take the heat out of the day.
  2. Linda, you're a stand out!
  3. Simple, attractive, delicious and refreshing. Sprinkle bananas with sugar and lemon juice. Fold into cream. Freeze, covered, in 6-8 small pots or possibly 2 ice cream trays for at least 4 hrs. Serve from freezer.
