Iced Banana Bread Recipe

This is a very basic and simple recipe .Its a great way to use up left over ripe bananas. I have been baking this for over 30 years now. I think the basic glaze gives it that taste of cake . It great to set out on Christmas morning and serve with coffee or anytime of the year. I bake up several loafs at a time and surprise friends and neighbors with a simple gift.

Ingredients

  • 1/2 cup of butter,soften
  • 1 teaspoon of pure vanilla extract
  • 1 cup of sugar
  • 2 eggs
  • 1 1/3 cups of mashed bananas (3 or 4 Medium)
  • 1 tablespoon of milk
  • 2 cups of self rising flour
  • 1 cup of chopped pecans ( this are optional )
  • You can substitute plain flour for the self rising flour if you do add a 1 teaspoon baking soda and 1/4 teaspoon of salt

Directions

  1. In a large bowl,cream butter,vanilla,and sugar until light and fluffy.
  2. Beat in eggs
  3. Combine milk and bananas set aside
  4. Blend dry ingredients in creamed mixture alternately with bananas .
  5. Stir in nuts.
  6. Pour into a greased 9x5x3 inch pan,
  7. Bake in 350 oven 1 hour or until tooth pick inserted in the center comes out clean. Cool 10 minutes ,remove from pan.
  8. Glaze
  9. 1 1/2 cups of confectioners sugar
  10. 1 teaspoon vanilla
  11. 2 to 4 tablespoons of milk
  12. Mix pour over warm bread
