%20in%20this%20one.%3C/p%3E%3Cp%3EThis%20is%20the%20recipe%20and%20I%20did%20make%20a%20few%20modifications.%20%20First,%20I%20cut%20the%20recipe%20in%20half%20(bad%20move%20-%20they%20were%20so%20good,%20I%20could%20have%20had%20more.)%20%20I%20also%20substituted%20all%20margarine%20instead%20of%20some%20shortening.%20%20It%20still%20worked.%20%20I%20will%20comment%20as%20I%20follow%20the%20recipe,%20here.%3C/p%3E%3Cp%3E*Toast%20almonds%20or%20hazelnuts%20by%20placing%20them%20in%20a%20single%20layer%20on%20an%20ungreased%20pan%20and%20baking%20them%20in%20a%20preheated%20350%C2%B0F%20oven%20for%207%20to%2010%20minutes,%20or%20until%20they%20smell%20%22toasty%22%20and%20are%20beginning%20to%20brown.%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl,%20cream%20together%20the%20%20butter%20and%20shortening%20%20margarine%20and%20sugar,%20then%20add%20the%20eggs%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition%20and%20scraping%20down%20the%20bowl%20midway%20through.%3C/p%3E%3Cp%3EBeat%20in%20the%20%20extracts,%20baking%20powder%20and%20salt.%3C/p%3E%3Cp%3EMix%20in%20the%20flour,%201%20cup%20at%20a%20time,%20till%20you%20have%20a%20cohesive,%20well-blended%20dough.%3C/p%3E%3Cp%3EAdd%20the%20nuts,%20apricots%20and%20chocolate%20mixing%20till%20they're%20well-distributed%20throughout%20the%20dough.%3C/p%3E%3Cp%3ETransfer%20the%20dough%20to%20a%20work%20surface%20(we%20don't%20bother%20to%20flour%20the%20surface;%20the%20dough%20is%20sticky,%20but%20is%20easily%20scraped%20up%20with%20a%20bench%20knife%20or%20dough%20scraper).%20I%20had%20to%20add%20flour.%20%20I%20could%20not%20get%20a%20grasp%20on%20it%20unless%20I%20diminished%20the%20slippery%20quality)%3C/p%3E%3Cp%3EDivide%20it%20into%20three%20fairly%20equal%20pieces,%20and%20shape%20each%20piece%20into%20a%20rough%2010-inch%20log.%3C/p%3E%3Cp%3ETransfer%20each%20log%20to%20a%20parchment-lined%20or%20lightly%20greased%20baking%20sheet,%20leaving%20about%203%20inches%20between%20each%20log;%20you%20may%20need%20to%20use%20two%20baking%20sheets.%3C/p%3E%3Cp%3EWet%20your%20fingers,%20and%20pat%20the%20logs%20into%20smooth-topped%20rectangles%2010%20inches%20long%20x%202%201/2%20inches%20wide%20x%207/8%20inch%20thick.%3C/p%3E%3Cp%3EBake%20the%20logs%20in%20a%20preheated%20375%C2%B0F%20oven%20for%2020%20to%2025%20minutes,%20or%20until%20they're%20beginning%20to%20brown%20around%20the%20edges.%3C/p%3E%3Cp%3ERemove%20them%20from%20the%20oven,%20and%20allow%20them%20to%20cool%20for%2030%20minutes.Lower%20the%20oven%20temperature%20to%20300%C2%B0F.%3C/p%3E%3Cp%3EGently%20transfer%20the%20logs%20to%20a%20cutting%20surface,%20and%20use%20a%20serrated%20knife%20to%20cut%20them%20on%20the%20diagonal%20into%201/2-inch%20wide%20slices.%3C/p%3E%3Cp%3EBecause%20of%20the%20nuts%20and%20the%20nature%20of%20the%20dough,%20the%20biscotti%20at%20this%20point%20are%20prone%20to%20crumbling;%20just%20be%20sure%20to%20use%20a%20slow,%20gentle%20sawing%20motion,%20and%20accept%20the%20fact%20that%20some%20bits%20and%20pieces%20will%20break%20off.%20(It's%20the%20privilege%20of%20the%20cook%20to%20eat%20these%20warm,%20tasty%20bits%20and%20pieces%20as%20they're%20created.)%20Carefully%20transfer%20the%20slices,%20cut%20sides%20up%20(and%20down)%20to%20a%20parchment-lined%20(makes%20cleanup%20easier)%20or%20ungreased%20baking%20sheet.%3C/p%3E%3Cp%3EYou%20can%20crowd%20them%20together,%20as%20they%20won't%20expand%20further;%20about%201/4-inch%20breathing%20space%20is%20all%20that's%20required.%3C/p%3E%3Cp%3EReturn%20the%20biscotti%20to%20the%20300%C2%B0F%20oven,%20and%20bake%20them%20for%2020%20minutes.%3C/p%3E%3Cp%3ERemove%20them%20from%20the%20oven,%20quickly%20turn%20them%20over,%20and%20bake%20for%20an%20additional%2020%20minutes,%20or%20until%20they're%20very%20dry%20and%20beginning%20to%20brown.%3C/p%3E%3Cp%3ERemove%20them%20from%20the%20oven,%20cool%20completely,%20and%20store%20in%20an%20airtight%20container.%20Yield:%20about%2060%20biscotti.%3C/p%3E%3Cp%3EThey%20taste%20wonderful%20and%20I%20am%20so%20glad%20I%20made%20these.%3C/p%3E%3Cp%3EJoin%20us%20at%20Have%20the%20Cake%20and%20you%20too%20can%20make%20delicious%20recipes.%3C/p%3E){kind=link}
