Ingredients

  • 3/4 c. cornmeal
  • 3/4 c. self-rising flour
  • 1 Tbsp. sugar
  • 1 tsp salt
  • 1 tsp soda
  • 3/4 c. buttermilk
  • 1 x Egg, slightly beaten
  • 1 med onion, finely minced Salad oil, or possibly shortening

Directions

  1. Combine dry ingredients; add in buttermilk, egg and onion, stirring well.
  2. Carefully drop batter by tablespoonfuls into deep warm oil; cook only a few at a time, turning once.
  3. Fry till hush puppies are golden (3 to 5 min).
  4. Drain well on absorbent towels.
  5. Yield: about 2 dozen
