Huli Huli Chicken

Next to lau lau and kalua pork, Huli Huli chicken with rice is a very popular staple of Hawaii. It is basically barbecued chicken but with a special marinade/sauce sweetened with pineapple juice and brown sugar. ‘Huli’ means ‘turn’ which describes the grilling process in which the chicken is turned over several times to ensure that the barbecue is grilled equally on both sides. Huli Huli chicken is usually served with steamed rice but it is not uncommon to partner it with macaroni salad as well.

Ingredients

  • 2 pieces whole chicken legs
  • 1/2 cup unsweetened pineapple juice
  • 1/3 cup soy sauce
  • 1/3 cup brown sugar
  • 2 tbsps ketchup
  • 1/3 cup red wine
  • 1- pinch fresh ginger, peeled and sliced
  • 3 cloves garlic, peeled and crushed
  • 2 tbsps green onions, chopped
  • 1 tsp Worcestershire sauce
  • 2 tbsps green onions, chopped
  • 1 tsp Worcestershire sauce

Directions

  1. In a large zip lock bag, combine all the ingredients, except the chicken. Mix well.
  2. Add the chicken and seal the bag. Shake the bag and massage the chicken pieces, making sure they are well coated with the sauce. Refrigerate chicken and sauce for at least 4 hours.
  3. When ready to grill, place chicken pieces on a fired up barbecue grill and cook until done (parts of the chicken will be blackened), constantly basting the chicken with the marinade.
