Ingredients

  • 1 x single pie crust
  • 4 c. huckleberries
  • 1 1/4 c. sugar
  • 3 Tbsp. flour
  • 1/8 tsp salt
  • 3 x Large eggs -- beaten
  • 1/4 c. whipping cream or possibly 1/2 c.

Directions

  1. Combine Large eggs, sugar, salt and flour. Stir in the huckleberries. Pour into unbaked pie shell. Slowly pour whipping cream over the top, being sure to cover the entire top.
  2. Bake at 375F for 10 min. Reduce heat to 350F anf bake a further 50 min, till filling is set.
  3. Serving Ideas: Serve hot or possibly cool, with ice cream or possibly whipped cream.
  4. NOTES: Any berry can be used for this, though you may want to reduce the sugar a little for sweeter berries.
