How To Preserve Raw Mangoes; Kerala Style Uppilitta Manga or Mangoes in brine is one the ways of storing raw organic mangoes. Though traditionally, it is "kanni manga" or "tender mangoes" that are are salted or preserved.
A few months back we went for a short holiday to Nelliyampathy Hills, on the way back I bought these tender mangoes (kanni manga) from Palghat and put them in brine as soon as I reached home....and then completely forgot about them, until the day I remembered about it and decided to click some pics for the blog. %20from%20Palghat%20and%20put%20them%20in%20brine%20as%20soon%20as%20I%20reached%20home....and%20then%20completely%20forgot%20about%20them,%20until%20the%20day%20I%20remembered%20about%20it%20and%20decided%20to%20click%20some%20pics%20for%20the%20blog.%20What%20awaited%20me%20was%20an%20empty%20bottle!!%3C/p%3E%3Cp%3EWell,%20my%20kids%20confessed%20to%20the%20crime%20along%20with%20my%20hubby......okay!%20so%20as%20usual%20I%20forgave%20them%20and%20wanted%20to%20make%20another%20batch;%20but%20then%20tender%20mango%20was%20no%20where%20to%20be%20found;%20so%20when%20I%20got%20these%20raw%20mangoes%20from%20a%20friend's%20backyard,%20I%20thought%20why%20not%20make%20with%20it?%3C/p%3E%3Cp%3EFor%20you%20first%20timers%20who%20want%20to%20preserve%20raw%20mangoes;%20let%20me%20tell%20you%20that%20there%20is%20no%20such%20recipe%20for%20this....years%20back%20when%20I%20asked%20my%20grandmother,%20all%20she%20said%20was%20boil%20salt%20and%20water%20together.....cool%20completely....pour%20over%20mangoes....let%20it%20sit%20for%20at%20least%20a%20month...and%20use%20it%20during%20the%20monsoons%20for%20curries,%20chutneys%20etc%20(will%20post%20soon).%20Here%20salt%20is%20the%20preservative,%20the%20mangoes%20will%20become%20tender%20as%20days%20pass.%3C/p%3E%3Cp%3EAmma%20told%20me%20that%20sometimes%20fungus%20will%20form%20on%20top;%20so%20in%20the%20olden%20days,%20cashew%20leaves%20were%20laid%20on%20top%20of%20the%20jar%20or%20bharani%20to%20keep%20away%20the%20fungus....well,%20in%20those%20days%20kilos%20and%20kilos%20of%20tender%20mangoes%20were%20stored%20this%20way....for%20the%20coming%20monsoons%20as%20there%20will%20be%20scarcity%20of%20fresh%20food.%20And%20salted%20mangoes%20were%20used%20in%20every%20possible%20way%20during%20the%20rainy%20season.%3C/p%3E%3Cp%3ETalking%20about%20%22bharani%22%20(ceramic%20jars)%20%20if%20you%20have%20one;%20use%20it%20for%20this%20purpose,%20since%20I%20have%20only%20one%20%22bharani%22%20which%20I%20use%20to%20make%20wine....I%20opted%20for%20this%20plain%20glass%20bottle....but%20I%20made%20sure%20that%20I%20kept%20it%20in%20the%20dark....no%20sunlight%20falling%20over%20it....atleast%20that%20is%20why%20we%20use%20bharani%20....well,%20I%20think%20so!%3C/p%3E%3Cp%3EThere%20are%20some%20variations,%20like%20some%20people%20add%20in%20%22kanthari%20mulaku%22%20or%20Piri%20piri%20chilies.....for%20an%20extra%20added%20spice%20and%20some%20organic%20backyard%20fresh%20curry%20leaves%20too%20for%20added%20flavor.....but%20I%20chose%20to%20omit%20all%20this.%3C/p%3E%3Cp%3EAuthor:%20Nisa%20Homey%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3ERaw%20Mango:%201%20kg%3C/p%3E%3Cp%3ESalt:%201-1%201/2%20cups.%3C/p%3E%3Cp%3EWater:%203%20to%204%20cups%20or%20as%20needed%20(water%20should%20cover%20the%20mangoes),%20so%20basically%20it%20depends%20on%20the%20utensil%20you%20are%20using.%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EClean%20and%20wash%20the%20mangoes,%20pat%20dry%20with%20a%20towel.%3C/p%3E%3Cp%3ESince,%20I%20am%20using%20large%20mangoes;%20I%20sliced%20the%20mangoes%20into%20half;%20If%20you%20have%20tender%20mangoes%20or%20%22kanni%20manga%22%20go%20ahead%20and%20use%20it%20whole%20as%20they%20are%20very%20small.%3C/p%3E%3Cp%3EI%20topped%20the%20sliced%20mangoes%20into%20a%20big%20clean%20and%20dry%20glass%20jar.%20If%20you%20have%20a%20ceramaic%20pot%20or%20%22bharani%22%20use%20it,%20though%20steel%20or%20aluminum%20is%20not%20ideal.%3C/p%3E%3Cp%3EBoil%20salt%20and%20water%20together,%20cool%20it%20completely%20and%20pour%20it%20over%20the%20mangoes.%20Cove%20lightly%20with%20a%20lid%20and%20keep%20it%20for%20a%20week.%20In%20between%20I%20check%20on%20it%20and%20give%20it%20a%20shake%20.....the%20mangoes%20will%20shrink%20a%20bit.%3C/p%3E%3Cp%3ENotes:%3C/p%3E%3Cp%3EIf%20you%20do%20not%20have%20a%20ceramic%20jar,%20you%20can%20use%20a%20glass%20jar%20like%20the%20way%20I%20did.%3C/p%3E%3Cp%3EIf%20using%20tender%20mangoes,%20you%20do%20not%20have%20to%20slice%20them.%20If%20the%20mango%20peel%20is%20thick%20it%20might%20take%20a%20bit%20time%20for%20the%20salt%20to%20seep%20in.%3C/p%3E%3Cp%3EOnce%20in%20a%20while%20check%20if%20there%20is%20any%20fungus%20formation%20on%20top;%20if%20there%20is%20wipe%20off%20with%20a%20clean%20towel%20or%20napkin.%20Make%20sure%20water%20covers%20the%20mangoes.%3C/p%3E%3Cp%3EYou%20can%20make%20curries,%20mango%20chutney%20%22manga%20chammanthi%22%20with%20this;%20which%20I%20will%20post%20in%20the%20coming%20days%20Or%20you%20can%20simply%20take%20one%20salted%20mango;%20chop%20it%20up%20add%20some%20chilies%20and%20mix%20and%20serve%20with%20rice%20gruel%20or%20%22kanji%22.%3C/p%3E%3Cp%3ERemember%20to%20use%20dry%20spoons%20while%20taking%20out%20the%20mangoes....wet%20spoons%20add%20moisture%20and%20thus%20fungus%20formation.%20If%20you%20handle%20the%20preserve/pickle%20carefully;%20it%20will%20stay%20good%20for%20a%20year.%3C/p%3E%3Cp%3EIf%20the%20mango%20peel%20is%20very%20thick,%20remove%20or%20peel%20it%20off%20before%20using%20it%20in%20curries%20and%20chutneys.%20If%20you%20feel%20the%20salt%20is%20too%20much;%20you%20can%20wash%20the%20salted%20mangoes%20under%20tap%20water%20before%20using.%3C/p%3E%3Cp%3EYou%20can%20also%20take%20%20out%20salted%20mangoes%20and%20make%20instant%20pickle;%20just%20heat%20a%20little%20oil,%20add%20in%20mustard%20seeds%20and%20fenugreek%20seeds,%20add%20in%20Kashmiri%20chilly%20powder,%20turmeric%20powder,%20a%20dash%20of%20asafoitida/kayam%20and%20mix%20well....once%20raw%20flavor%20diminishes%20add%20in%20a%20bit%20of%20vinegar,%20switch%20off%20the%20fire%20and%20once%20it%20cooled%20down%20add%20in%20chopped%20mangoes....mix%20well%20and%20serve...so%20easy!%3C/p%3E%3Cp%3EIts%20been%20more%20than%20a%20month,%20since%20I%20made%20these%20and%20they%20still%20are%20in%20pretty%20good%20shape.%3C/p%3E){kind=link}
