%3C/p%3E%3Cp%3ELet%E2%80%99s%20see%20a%20show%20of%20how%20of%20hands%20for%20how%20many%20of%20you%20quake%20with%20fear%20at%20the%20thought%20of%20poaching%20an%20egg.%20I%20fully%20admit%20that,%20up%20until%20about%20six%20months%20ago,%20I%20would%20have%20raised%20two%20hands.%20Poaching%20eggs%20was%20a%20task%20that%20should%20be%20left%20to%20the%20professionals.%20Each%20time%20I%20attempted%20the%20seemingly%20impossible%20skill,%20creeping%20tendrils%20of%20egg%20white%20would%20fill%20the%20pot,%20or%20the%20yolk%20would%20be%20hard%20as%20a%20rock.%20The%20eggs%20were%20getting%20the%20best%20of%20me%20and%20the%20little%20control%20freak%20sitting%20on%20my%20shoulder%20was%20not%20okay%20with%20that.%3C/p%3E%3Cp%3EWhen%20I%20went%20on%20a%20trip%20with%20the%20kind%20people%20at%20the%20American%20Egg%20Board%20(you%20know,%20the%20Incredible%20Egg%20people),%20Jeffrey%20Saad%20(host%20of%20the%20Cooking%20Channel%E2%80%99s%20United%20Tastes%20of%20America),%20showed%20us%20how%20to%20achieve%20a%20perfect,%20runny%20poached%20egg%20every%20time%20out%20of%20the%20gate.%20It%20was%20probably%20a%20skill%20he%20learned%20on%20day%20one%20of%20culinary%20school%20but,%20to%20me,%20it%20made%20the%20man%20a%20verified%20genius!%3C/p%3E%3Cp%3ECome%20on,%20who%20can%20resist%20getting%20their%20picture%20taken%20in%20an%20egg%20chair?%3C/p%3E%3Cp%3EBy%20using%20a%20large%20skillet%20rather%20than%20a%20pot,%20this%20method%20gives%20you%20more%20control%20over%20the%20eggs.%20A%20touch%20of%20vinegar%20is%20added%20to%20help%20keep%20long%20tendrils%20of%20egg%20white%20under%20control.%20And%20the%20timing?%20Three%20minutes%20every%20time%20%E2%80%93%20it%20works%20like%20a%20charm.%3C/p%3E%3Cp%3EAn%20aside%20on%20Egg%20Nutrition:%3C/p%3E%3Cp%3EIn%20our%20house,%20eggs%20are%20one%20of%20our%20go-to%20foods%20for%20a%20quick%20meal.%20There%20is%20nothing%20easier%20than%20whipping%20up%20an%20omelet%20on%20a%20busy%20week%20night.%20So,%20I%20was%20happy%20to%20hear%20the%20USDA%E2%80%99s%20newly-released%20data%20on%20eggs.%20Once%20thought%20to%20be%20a%20little%20oval%20full%20of%20heart-stopping%20cholesterol,%20the%20USDA%20reports%20that%20eggs%20actually%20have%2014%20percent%20less%20cholesterol%20than%20originally%20reported.%20In%20addition,%20one%20large%20egg%20now%20provides%2041%20IU%20of%20Vitamin%20D,%20a%2064%20percent%20increase%20since%202002.%20That%20means%20that%20making%20egg%20benedict%20on%20the%20weekend,%20with%20my%20newly-found%20poaching%20skills,%20and%20fitting%20in%20a%20couple%20of%20egg-based%20meals%20during%20the%20week%20can%20fit%20with%20the%20healthy%20lifestyle%20we%20are%20trying%20to%20achieve.%20Now,%20onto%20the%20poaching.%3C/p%3E%3Cp%3EPoaching%20an%20egg:%3C/p%3E%3Cp%3EStep%201:%3C/p%3E%3Cp%3EFill%20a%20large%20skillet%20with%20water%20to%20three-quarters%20full%20and%20set%20over%20medium%20heat.%20Bring%20to%20the%20water%20to%20a%20simmer,%20add%201%20teaspoon%20vinegar%20(any%20kind%20will%20do),%20and%20a%20couple%20pinches%20of%20salt.%3C/p%3E%3Cp%3EWhy?%3C/p%3E%3Cp%3EVinegar%20is%20used%20to%20speed%20up%20coagulation,%20which%20will%20stop%20the%20egg%20from%20spreading%20through%20the%20water.%20The%20salt%20is%20added%20for%20seasoning,%20and%20is%20optional.%20If%20you%20prefer,%20season%20after%20removing%20the%20eggs%20from%20the%20water.%3C/p%3E%3Cp%3EStep%202:%3C/p%3E%3Cp%3ECrack%20the%20eggs%20directly%20into%20the%20water.%20Make%20sure%20the%20water%20remains%20at%20a%20simmer,%20adjusting%20the%20heat%20as%20necessary.%3C/p%3E%3Cp%3EWhy?%3C/p%3E%3Cp%3EMany%20people%20recommend%20cracking%20the%20egg%20into%20a%20small%20bowl,%20and%20then%20sliding%20the%20egg%20into%20the%20water.%20However,%20if%20you%20take%20care%20not%20to%20break%20the%20yolk,%20it%20is%20easier%20to%20crack%20the%20egg%20directly%20into%20the%20water.%20Just%20go%20for%20it!%3C/p%3E%3Cp%3EStep%203:%3C/p%3E%3Cp%3ECook%20for%203%20minutes%20to%20achieve%20a%20perfectly%20poached%20egg.%20Using%20a%20slotted%20spoon,%20remove%20each%20egg%20from%20the%20water%20and%20blot%20on%20a%20paper%20towel%20to%20remove%20excess%20water%20before%20transferring%20to%20serving%20plate.%3C/p%3E%3Cp%3EWhy?%3C/p%3E%3Cp%3ENo%20one%20likes%20soggy%20toast%20or%20English%20muffins,%20so%20be%20sure%20not%20to%20skip%20this%20step.%3C/p%3E%3Cp%3EIf%20you%20are%20making%20poached%20eggs%20for%20a%20crowd,%20they%20can%20be%20made%20ahead%20of%20time.%20When%20first%20poaching,%20the%20eggs%20should%20be%20undercooked,%20for%202%20minutes.%20Store%20the%20eggs%20in%20a%20bowl%20of%20ice%20water%20in%20the%20fridge%20for%201%20to%202%20days.%20Before%20serving,%20use%20a%20slotted%20spoon%20to%20transfer%20the%20eggs%20from%20the%20bowl%20into%20gently%20simmering%20water.%20Leave%20in%20the%20water%20for%201%20minute,%20then%20remove,%20following%20directions%20above.%3C/p%3E%3Cp%3EDisclaimer%20(or%20nondisclaimer):%20This%20is%20not%20a%20sponsored%20post.%20The%20opinions%2
