Hot Tomato Grits

Ingredients

  • 2 x bacon slices minced
  • 2 can chicken broth - (14 1/2 ounce)
  • 1/2 tsp salt
  • 1 c. quick-cooking grits
  • 2 lrg tomatoes peeled, minced
  • 2 Tbsp. canned minced green chiles
  • 1 c. shredded Cheddar cheese - (4 ounce) Minced tomato Cooked and crumbled bacon Shredded Cheddar cheese

Directions

  1. Cook bacon in a heavy saucepan till crisp, reserving drippings in pan. Gradually add in broth and salt; bring to a boil.
  2. Stir in grits, tomato, and chiles; return to a boil, stirring often. Reduce heat, and simmer, stirring often, 15 to 20 min.
  3. Stir in cheese; cover and let stand 5 min or possibly till cheese melts. Garnish, if you like.
  4. This recipe yields 6 servings.
  5. Comments: To decrease fat and calories, drain bacon on paper towels, discarding drippings; substitute reduced-fat sharp Cheddar cheese for regular.
