HOT SHRIMP CURRY WITH COCONUT AND CASHEWNUTS

This is a simple delicious curry recipe that is famous along India's coastal or bay areas.It is considered a festive recipe too in some parts of the country which is made during special occasions.Coconut gives the creamy texture and the cashew nuts provide the crunch to the whole dish.

Ingredients

  • 2 tbsp-oil
  • 1 bay leaf, crumbled
  • 2 Cloves garlic, crushed
  • 2/3 cups grated unsweetened Coconut
  • 1/2 cup broken cashewnuts,roasted
  • 1/4 cup Lemon juice
  • 1.5 tsp-salt
  • 1 cup water
  • 2 pounds raw shrimp, shelled and deveined
  • 1 medium onion, finely chopped
  • 1 tbsp-ground coriander
  • 1 tsp-cumin
  • 1.5 tsps-cayenne pepper
  • 1/2 tsp-mustard seeds, crushed
  • 1/2 tsp-black pepper, crushed

Directions

  1. Heat oil and fry onion, coriander, cumin, cayenne pepper, mustard seeds, black pepper, bay leaf and garlic for 2 to 3 minutes,put in coconut and fry another minute or two.Remove and transfer this onto a different bowl.
  2. In the same pan add and roast cashew nuts till lightly golden.Remove 2 tsp of this and save for garnishing.Add the already roasted onion, coriander, cumin, cayenne pepper, mustard seeds, black pepper, bay leaf and garlic,coconut and cashewnuts.
  3. Add lemon juice, salt and water
  4. Simmer for 10 minutes
  5. Add shrimp and cook until done.
  6. Garnish the dish by sprinkling the saved roasted cashew nuts.
  7. Serve with steaming white rice and some fried crackers on the side.
