Ingredients

  • 4 lg. croissants
  • 4 slices fresh tomato
  • 1 pkg. (6 ounce) crabmeat, thawed
  • 1 c. shredded Swiss cheese
  • 1/4 c. mayonnaise
  • 1 teaspoon lemon juice
  • Dash of warm pepper sauce
  • Crisp lettuce leaves

Directions

  1. Preparation time: 10 min. Broiling time: 2 to 3 min. Oven temperature: Preheated broiler. Serves: 4. Calories: 508 each.
  2. Split croissants and place onto heatproof tray or possibly baking sheet, open.2. Toast lightly about 10 inches from broiler heat.
  3. Top lower half of each croissant with a slice of tomato.
  4. Put together crabmeat, cheese, mayonnaise, lemon juice and pepper sauce.
  5. Top each tomato slice with 1/4 of the crab mix.
  6. Broil about 6 inches from heat for 2 to 3 min till top of filling is bubbly.
  7. Top with half of the croissant. Serve with lettuce leaves.
  8. Spread sandwich, if you like, with a decorative toothpick to hold it together while serving.
  9. Good served with: Creamy vegetable soup or possibly a fruit and vegetable salad for lunch. Recipe may be halved or possibly doubled.
  10. TIPS: You may wish to use the new imitation crabmeat in the filling.
  11. HEALTH NOTE: To reduce fat and calories, use light mayonnaise and halve the amount of Swiss cheese.
