  1. In a pot combine chicken stock, garlic, lime leaves, lemongrass, fish sauce and crushed peppers to boil for a few min. Then add in scallops, shrimps, straw mushrooms, jalapenos and salt and pepper to taste. Let boil and add in the fresh mint and scallions. Adjust seasoning again. Serve immediately.
