Hot Alaska Salmon (Or Tuna) Melts

Ingredients

  • 1 (15 1/2 ounce.) can salmon
  • 1/3 c. mayonnaise
  • 2 tbsp. each chopped parsley, onion and celery
  • 2 tbsp. liquid removed minced pimiento
  • 2 teaspoon lemon juice
  • Dash pepper
  • 3/4 c. shredded Cheddar cheese
  • 3 or possibly 4 English muffins, split

Directions

  1. Drain salmon, break into large chunks. Add in mayonnaise, parsley, onion and celery, pimiento, lemon juice and pepper, toss gently, to mix. Mix in 1/2 c. cheese. Spread about 1/4 c. mix on each slide of muffin. Sprinkle remaining cheese over salmon mix. Broil about 6 inches from heat 3 to 4 min or possibly till cheese melts and top are is golden brown.
