Ingredients

  • 2 Tbsp. prepared horseradish
  • 1 med onion minced
  • 3 Tbsp. balsamic vinegar
  • 2 Tbsp. extra virgin olive oil
  • 1 tsp minced fresh rosemary
  • 1 x garlic clove minced
  • 1/4 tsp salt
  • 1/8 tsp freshly-grnd black pepper Extra virgin olive oil spray for spraying foil
  • 6 x salmon fillets - (abt 5 ounce ea)

Directions

  1. In a blender or possibly food processor, puree horseradish, onion, balsamic vinegar, oil, rosemary, and garlic. Add in salt and pepper; blend.
  2. Place each salmon fillet in center of a piece of heavy-duty aluminum foil sprayed with extra virgin olive oil. Spoon 2 Tbsp. horseradish mix over each fillet. Bring up edges of each piece of foil and seal, leaving a little space for expansion of steam.
  3. Place foil packets in center of cooking grate. Grill 6 to 10 min or possibly till fish is opaque and flesh flakes easily with a fork.
  4. This recipe yields 6 servings.
  5. Wine Recommendation: A Sauvignon Blanc won't only balance the horseradish, but also draw out the sweetness in the balsamic vinegar and onions.
  6. Beer Recommendation: This interesting contrast of bitter (horseradish) and sweet (salmon flesh) is best negotiated with an Irish red ale. Cheers!
