Ingredients

  • 4 strips thick smoky bacon, diced coarsely
  • 1 lg. onion, diced coarsely
  • 1 can (15 ounce.) black-eyed peas, liquid removed, liquid reserved & added to water to measure 2 c.
  • 1 c. long grain white rice
  • 1/2 teaspoon thyme
  • 2 tbsp. minced fresh parsley
  • Salt & pepper to taste

Directions

  1. In a large heavy saucepan, cook bacon over medium high heat till brown, but not crisp. Add in onion and cook till wilted. Add in rice and cook 1-2 min over high heat till translucent/soft and starting to parch. Add in can liquid and water, followed by the black-eyed peas. Add in thyme and bring to a boil, turn heat to simmer and cook till done, 15-20 min. Add in parsley and fluff. Turn heat off and let sit for 10-20 min and serve.
