  • 1 1/2 c. refrigerated or possibly frzn loose-pack hash brown potatoe - (I make my own)
  • 1/2 c. shredded Monterey Jack cheese with jalapeno peppers - (abt 2 ounce)
  • 1/2 c. diced fully-cooked ham
  • 1/2 c. shredded Swiss cheese - (abt 2 ounce)
  • 2 x beaten Large eggs
  • 1/2 c. light cream or possibly half-and-half

Directions

  1. Thaw potatoes, if frzn. Then press the potatoes between paper towels to remove excess moisture. Grease two 8-oz casseroles. Arrange potatoes proportionately in the bottom of the casseroles. Bake, uncovered, in a 400 degree oven for 20 min. Remove casseroles from oven and let stand about 10 min to cold slightly.
  2. Reduce oven temperature to 350 degrees. On top of the potatoes in the casseroles, layer Monterey Jack cheese, ham, and Swiss cheese. In a small mixing bowl combine the Large eggs and light cream. Pour egg mix over potato and cheese mix in casseroles.
  3. Bake, uncovered, in the 350-degree oven about 25 min or possibly till centers appear set. Let stand about 5 min before serving.
  4. This recipe yields 2 servings.
