Honeyed Sweet Potatoes

A nice alternative to candied yams. Sweet potatoes are sweet enough without adding sugar or other processed foods. This one uses a bit of honey to add sweetness and creamy texture with a topping of pine nuts for a bit of a crunch. Good recipe for the holidays.

Ingredients

  • 4 large sweet potatoes
  • 1/2 C honey (real maple/brown rice syrup may be substituted)
  • 4 T butter
  • 2 T pine nuts
  • Salt and pepper to taste (optional)

Directions

  1. Preheat oven to 350-degrees.
  2. Preheat a small cast iron skillet (dry). Add pine nuts and toast until golden brown, stirring them constantly to achieve even browning - about 4-5 minutes. Chop coarsely and set aside.
  3. Prick the sweet potatoes with a fork and microwave them on high for about 8 minutes or until tender, turning over once to ensure even cooking. Allow to cool enough to handle.
  4. Scoop out sweet potatoes from their skins into a large bowl and mash until softened.
  5. Mix honey into the sweet potatoes. Add salt and pepper as desired.
  6. Scoop potatoes into a large oiled casserole dish, dot with butter, add pine nuts and bake for 20 - 25 minutes, until heated through but not browned. Serve warm.
