Ingredients

  • ¼ cup honey
  • 2 tablespoon freshly squeezed lemon juice
  • 2 tablespoon soy sauce
  • ½ cup raisins
  • boiling water (as needed)
  • 4 tablespoon unsalted butter (divided)
  • 1 tart crisp apple (halved, cored and thinly sliced)
  • 2 large chicken breasts halves (bone-in and skin attached)
  • salt and pepper (as needed)
  • 6 fresh rosemary sprigs
  • 4 clove garlic (peeled and halved)
  • 4 thinly sliced lemon rounds (from the center of the lemon)
  • 2 medium onions (peeled and thinly sliced)
  • 1 large russet potato (peeled, small diced and boiled until just tender)
  • 1 tart crisp apple (peeled, halved, cored and small diced)
  • ½ cup chicken stock
  • ½ teaspoon ground cardamom
  • 1/8 teaspoon ground nutmeg
  • ½ cup heavy cream (plus more if needed)
  • fresh thyme leaves (to taste)
