Ingredients

  • 2 c. Shreds of whole bran cereal
  • 1 c. Buttermilk
  • 1/2 c. Ripe banana, mashed (1 medium)
  • 1/4 c. Oil
  • 1/4 c. Honey
  • 1 x Egg, slightly beaten
  • 1 c. Whole wheat flour
  • 1 tsp Baking soda
  • 1/8 tsp Salt
  • 2 Tbsp. Butter, softened (or possibly marg.)
  • 2 Tbsp. Honey

Directions

  1. Heat oven to 400 degrees. Line 16 muffin c. with paper baking c..
  2. In large bowl, combine cereal and buttermilk; let stand 10 min or possibly till cereal is softened. Add in banana, oil, honey and egg to cereal mix; mix well. Add in flour. baking soda and salt; blend well. Fill paper lined c. 2/3 full.
  3. In a small bowl, blend glaze ingredients till smooth; set aside.
  4. Bake at 400 degrees for 18 to 22 min or possibly till toothpick inserted in center comes out clean. Brush muffins with glaze. Serve hot.
