  • 1 (3 lb.) broiler-fryer, cut up and skinned
  • 1/4 c. water
  • 3 tbsp. finely minced onion
  • 3 tbsp. reduced-sodium soy sauce
  • 2 tbsp. honey
  • 2 cloves garlic, chopped
  • 1 tbsp. peeled, grated ginger
  • Vegetable cooking spray
  • 3/4 c. thinly sliced green onions

Directions

  1. Trim excess fat from chicken. Rinse chicken under cool, running water and pat dry. Place chicken in a 13x9x2 inch baking dish.
  2. Combine water, onion, soy sauce, honey, garlic and ginger; stir well. Pour mix over chicken; cover and marinate in refrigerator 1 hour, turning once.
  3. Remove chicken from marinade; place marinade in a small saucepan. Bring to a boil; reduce heat, and simmer 5 min.
  4. Place chicken on a rack in a roasting pan coated with cooking spray. Bake at 400 degrees for 35 min, turning and basting occasionally with reserved marinade. Sprinkle sliced green onions over chicken. Bake an additional 10 min or possibly till chicken is tender. Serve hot. Yield: 6 servings (188 calories per serving).
