%20that%20I%20won%E2%80%99t%20need%20to%20make%20another%20batch.%20%20Happy%20Independence%20Day!%3C/p%3E%3Cp%3EMakes%20about%203%20dozen%20large%20marshmallows%20(more%20if%20cutting%20into%20smaller%20sizes)%3C/p%3E%3Cp%3EMarshmallow%20recipes%20fall%20into%20two%20different%20camps%20when%20it%20comes%20to%20egg%20whites.%20Some%20recipes%20omit%20egg%20whites%20completely,%20while%20others%20use%20anywhere%20from%202%20to%204%20egg%20whites.%20%20%20The%20reason?%20%20Those%20that%20do%20use%20egg%20whites%20claim%20their%20marshmallows%20are%20more%20airy%20and%20I%20have%20to%20agree%20that%20while%20I%E2%80%99ve%20omitted%20egg%20whites%20in%20the%20past,%20this%20batch%20with%20two%20egg%20whites%20made%20decidedly%20better%20mallows.%3C/p%3E%3Cp%3EGrease%20a%20large%20casserole%20dish%20with%20the%20vegetable%20oil%20and%20then%20sprinkle%20with%20confectioner%E2%80%99s%20sugar%20to%20coat.%20Place%20%C2%BD%20cup%20cold%20water%20in%20a%20small%20bowl.%20Sprinkle%20the%20gelatin%20over%20the%20water%20and%20allow%20it%20to%20bloom.%20Do%20not%20stir.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20combine%20the%20sugar,%20corn%20syrup,%20salt%20and%20remaining%20%C2%BD%20cup%20water.%20%20%20Heat%20over%20medium-high%20heat;%20stir%20until%20the%20sugar%20dissolves.%20After%20the%20sugar%20dissolves,%20stop%20stirring.%20Boil%20the%20mixture%20it%20reaches%20the%20soft%20ball%20stage%20or%20240%20degrees%20on%20a%20candy%20thermometer.%3C/p%3E%3Cp%3EPlace%20the%20egg%20whites%20in%20the%20bowl%20of%20an%20electric%20mixer%20fitted%20with%20a%20whisk%20attachment%20and%20beat%20on%20medium%20speed%20until%20frothy.%20When%20sugar%20mixture%20reaches%20a%20temperature%20of%20230%20degrees%20on%20the%20candy%20thermometer,%20increase%20the%20speed%20to%20medium-high%20and%20beat%20until%20stiff%20peaks%20form.%3C/p%3E%3Cp%3EWhen%20sugar%20mixture%20reaches%20240%20degrees,%20adjust%20the%20mixer%20speed%20to%20low.%20Carefully%20add%20the%20hot%20sugar%20mixture%20to%20the%20stiff%20egg%20whites.%20Do%20your%20best%20to%20dribble%20the%20sugar%20mixture%20down%20the%20side%20of%20the%20mixing%20bowl%20into%20the%20egg%20mixture.%20%20%20When%20all%20the%20sugar%20mixture%20has%20been%20added,%20increase%20the%20mixer%20speed%20to%20high.%3C/p%3E%3Cp%3EWhile%20you%20beat%20the%20eggs%20and%20sugar,%20scrape%20the%20bloomed%20gelatin%20into%20your%20still%20warm%20saucepan%20(there%20is%20no%20need%20to%20wash%20it%20after%20the%20sugar%20mixture).%20Whisk%20until%20the%20gelatin%20returns%20to%20liquid%20form%20(place%20over%20medium-low%20heat)%20if%20needed.%20Carefully%20pour%20the%20liquid%20gelatin%20into%20the%20mixing%20bowl%20with%20the%20rest%20of%20the%20ingredients%20and%20then%20add%20the%20vanilla%20extract.%20%20You%20may%20want%20to%20turn%20down%20the%20mixer%20speed%20when%20adding%20the%20gelatin%20and%20vanilla.%20Continue%20to%20beat%20the%20mixture%20for%20a%20total%20of%208%20to%2010%20minutes%20or%20until%20marshmallow%20mixture%20has%20cooled.%20The%20mixture%20will%20be%20white%20and%20very%20thick%20although%20still%20spreadable.%3C/p%3E%3Cp%3EPour%20the%20cooled%20marshmallow%20mixture%20into%20the%20prepared%20casserole%20dish%20and%20smooth%20the%20surface.%20Sprinkle%20with%20additional%20confectioner%E2%80%99s%20sugar.%20%20%20Let%20sit%20for%20at%20least%20four%20hours%20for%20the%20gelatin%20to%20set.%3C/p%3E%3Cp%3EWhen%20ready%20to%20shape%20the%20marshmallows,%20combine%20the%20confectioners%20sugar%20and%20cornstarch%20in%20a%20small%20bowl%20and%20whisk%20to%20combine.%20Slide%20a%20sharp%20knife%20around%20the%20edge%20of%20the%20pan%20to%20loosen%20the%20marshmallows%20and%20turn%20them%20out%20onto%20a%20cutting%20board%20dusted%20with%20confectioner%E2%80%99s%20sugar.%20You%20may%20have%20to%20use%20your%20fingers%20to%20pull%20the%20marshmallows%20out%20of%20the%20casserole%20dish,%20but%20it%20should%20stay%20in%20one%20large%20block%20when%20you%20do%20this.%20Use%20a%20sharp%20knife%20or%20pizza%20wheel%20to%20cut%20the%20marshmallow%20into%20squares.%20After%20cutting,%20dip%20each%20marshmallow%20in%20the%20bowl%20with%20the%20cornstarch%20and%20confectioner%E2%80%99s%20sugar%20to%20turn%20to%20coat%20all%20the%20edges.%20Shake%20to%20remove%20any%20excess%20cornstarch-confectioner%E2%80%99s%20sugar%20and%20store%20in%20an%20airtight%20container%20for%20up%20to%20one%20week.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
