Before leaving for vacations I did deep cleansing of fridge so now it's time to refill all those empty jars of condiments and I started with simple Marinara Sauce, which is a very versatile sauce, spread a generous helping over pizza (see recipe here) base or toss pasta in it or dip meatballs in it, Marinara Sauce is always an Italian Hero.
Ingredients
- 500g ripe tomatoes
- 1 onion, roughly chopped
- 4 - 5 garlic cloves, roughly smashed
- 2 Tbsp olive oil
- 2 Tbsp red wine vinegar (optional)
- 2 Tbsp tomato paste
- A handful of fresh basil leaves, torn
- Salt and black pepper as per taste
- 1/2 Cup vegetable stock
Directions
- In a saucepan heat oil and add onion and garlic. Cook until aroma is released and onion is tender but not brown.
- Stir in tomatoes with their juices, tomato paste, vinegar and salt. Mix nicely and add stock.
- Heat to boiling, breaking up tomatoes with sides of spoon.
- Reduce heat, cover and simmer, stirring occasionally until sauce thickened slightly about 20 minutes.
- Finish it with basil and pepper. Let it cool and store in clean, dry container in the fridge.
