Before leaving for vacations I did deep cleansing of fridge so now it's time to refill all those empty jars of condiments and I started with simple Marinara Sauce, which is a very versatile sauce, spread a generous helping over pizza (see recipe here) base or toss pasta in it or dip meatballs in it, Marinara Sauce is always an Italian Hero.

Directions

  1. In a saucepan heat oil and add onion and garlic. Cook until aroma is released and onion is tender but not brown.
  2. Stir in tomatoes with their juices, tomato paste, vinegar and salt. Mix nicely and add stock.
  3. Heat to boiling, breaking up tomatoes with sides of spoon.
  4. Reduce heat, cover and simmer, stirring occasionally until sauce thickened slightly about 20 minutes.
  5. Finish it with basil and pepper. Let it cool and store in clean, dry container in the fridge.
